No-Bake Granola Bars

I got a new cookbook in the mail yesterday.


I ordered it from Mark's Daily Apple and it's REALLY good.  When we got his first cookbook there were some things I wanted to try and make, but there were also a lot of things that I would never eat! This book is made by a couple of people that follow the Paleo Lifestyle.  I love the idea of the book.  One of the hardest things for me eating this way has been my cravings! I want a burger with a bun, not just the meat. I want a cookie once in awhile, or I want a brownie.  This book is perfect for all of those cravings.
Emalee read through it and saw something she wanted right away.  So I made it last night and let it set the 3 hours.
It's a no-bake granola bar. NO sugar, NO flour , NO grains!! And it tastes really good.  Here's proof that it tastes good...


I gave Alex a tiny bit to see what he thought. I didn't tell him what was in it and he liked it and asked for a normal piece.  He ate it all up and asked for another!
It's just shredded coconut, butter, coconut oil, honey and chocolate chips. I used normal ones but I need to find a higher coco % so the sugar content isn't horrible.

There will be more to come when I make more things.  They have a chocolate chip cookie that I really want to try. And a bunch of other things!!
